Feature Recipes

Our feature recipe this month is from Giovanni Pilu from Pilu at Freshwater.

Sardinian Seafood Soup
Sa Cassola

The general Italian name for hearty seafood soups is zuppa di pesce but in Sardinia such dishes are called burrida in the south, and cassola in the north. It is important that you don't stir the soup once the seafood goes in - at the most give it a shake to make sure everything is cooking evenly - otherwise the seafood will break up and ruin the appearance of the dish.

This recipe comes from A Sardinian Cookbook which was written by Giovanni and Roberta Muir.
