Sardinian Seafood Soup
Sa Cassola

 

The general Italian name for hearty seafood soups is zuppa di pesce but in Sardinia such dishes are called burrida in the south, and cassola in the north. It is important that you don't stir the soup once the seafood goes in - at the most give it a shake to make sure everything is cooking evenly - otherwise the seafood will break up and ruin the appearance of the dish.

Laura hails from Valencia Spain. She's worked for world class Michelin starred venues such as “Restaurante El Celler de Can Roca” under ChefJoan Roca, and “La Pergola” with Chef Heinzbeck in Rome. Spain’s one Michelin star “Paco Morales” was the most recent to have Laura as their Head Pastry Chef running a team of eight. Laura began as Ormeggio’s Pastry Chef in May 2012 and has taken to the southern hemisphere with her characteristic passion and excitement.
