CIRA Awards

The Council of Italian Restaurants in Australia aims to expand Italian culinary culture, increase public knowledge of both traditional and evolving values in Italian food and encourage informed experimentation in the industry. CIRA, with the Young Talent award, aims to foster young chefs and increase their knowledge of Italian food in Australia.  The newly introduced ‘Cuochi si nasce’ competition aims to recognise the contribution made by chefs to Italian restaurants in Australia.

And the winners are:

Inaugural Cuochi si Nasce Award: Dario Manca (Pilu at Freshwater)

Young Talent Award: Joint Winners - Andrew Wong (Ajo Restaurant) AND Rey Ambas (Pilu at Freshwater)

 

Young Talent Award


The 2015 winner will receive the CIRA-ALMA Experience Scholarship Prize inclusive of a two-week course at the prestigious ALMA International School of Italian Cuisine in Parma Italy, accommodation and return airfares. Acqua Panna-San Pellegrino presents this prestigious prize.

Eligibility to enter is open to young chefs aged between 18 and 30, current residents of Australia (i.e. Australian citizens or permanent residents) who are employed in an Italian restaurant.

To enter, eligible applicants must complete the application form and meet the criteria as follows:

  • Open to NSW and ACT residents only
  • Applicants must provide up to three places of employment (if applicable) including referees and contact details
  • Applicants must describe in 300-400 words their philosophy on Italian food
  • Entries must be submitted to CIRA before the deadline
  • Finalists will be required to prepare a classic Italian dish with ingredients supplied on the day and an Italian recipe of their choice

 ‘Cuochi si nasce’ Competition

The 2015 winner will spend time at one of Australia’s best restaurants with flights and accommodation courtesy of Barilla.

Eligibility to enter is open to all chefs who are employed in an Italian restaurant.  They must be Australian citizens or residents or must be on a sponsored visa.  Those on holiday visas will not be eligible.

To enter, eligible applicants must complete the application form and meet the criteria as follows:

  • Applicants must provide up to three places of employment (if applicable) including referees and contact details
  • Applicants must describe in 300-400 words their philosophy on Italian food
  • Entries must be submitted to CIRA before the deadline
  • Finalists will be required to prepare an Italian recipe of their choice with a nominated ‘hero’ ingredient
  • Free for CIRA member restaurants or $40 entry
